Got the real deal here, and well worth the extra dough. I've used it for roasting vegetables and also for baked goods. 100% perfect every time and easy to clean. The max temperature I've used it is 425 F, so I haven't had any issue with discoloration or food sticking.

High quality. Better than foil which flakes off onto food. How do I know foil flakes off onto food?….I cut up fresh fruit and freeze it for eating later on. Before I freeze the fresh fruit, I used to put it on foil (on a cookie sheet) to freeze it (if you freeze fruit, even raspberries, the fruit clumps up in one big mound of fruit). When I use the raspberries (as one example), I put them in the microwave to thaw them just a tad before eating…and low and behold…they start to “spark” in the microwave. Hmmmmm…seems foil is getting onto the food. So long story short…use parchment paper or use the wonderfully made, reusable, easy to clean….SILPAT!! I used the SILPAT for cooking chicken and steak too and it worked great.
